Ginger & Rhubarb Meringue Nests

Ingredients

2 meringue nests
2 balls stem ginger, grated
200g/7oz mascarpone
2 stalks rhubarb
1 tbsp caster sugar
1/4 tsp cinnamon
2 tsp ginger syrup

Method

  1. Place the rhubarb, sugar, cinnamon and ginger syrup in a small saucepan. Simmer for 5 minutes or until stewed.
  2. Place the meringue nests on two plates.
  3. Combine the grated stem ginger with the mascarpone.
  4. Divide the ginger mascarpone between the two nests.
  5. Top the ginger mascarpone with stewed rhubarb and serve.
