Garlic Butter Prawns

Tuna With Chilli, Pepper & Ginger

Ingredients

1 chilli, chopped and deseeded
1cm / half inch ginger, peeled and chopped
Black peppercorns, ground coarsely
Olive oil
Flour
4 tuna steaks, 2.5cm / 1in thick

Method

  1. Mix the chilli, ginger and pepper with a small amount of oil (enough to coat the tuna on both sides but no more).
  2. Dust the tuna with a little flour to provide a slight crust when cooked.
  3. Rub the chilli, ginger, pepper and oil mixture onto both sides of the tuna.
  4. Sear the tuna on a very hot griddle for a few minutes on each side until the outside is just charred and the inside is still pink.
