| 85g/3oz unsalted butter
1 green chilli, de-seeded and finely chopped
Handful fresh basil, chopped
Pinch of salt
2 garlic cloves, peeled and crushed
3 tiger prawns, de-shelled
3-4 slices of aubergine
1 tomato, cut into wedges

- Place the butter, chilli, basil, salt, and garlic into
a microwaveable bowl and cook on HIGH for one minute to melt the butter.
- Heat a medium non-stick pan and fry the prawns for 2-3
minutes.
- Pour in the butter mixture and stir to coat the prawns.
- Heat a griddle pan to hot. Grill the aubergine slices
for 1-2 minutes on each side, to soften.
- Remove from the heat and transfer to a serving plate.
- Remove the garlic prawns from the heat and serve alongside
the griddled aubergine and tomato wedges.
