Garlic & Potato Soup

Ingredients

2 tbsp butter
1 onion, peeled and diced
5 garlic cloves, peeled and chopped
255g / 9oz charlotte potatoes, peeled and diced
455ml /16 fl oz chicken stock
55ml / 2 fl oz double cream
1 tbsp fresh chives, chopped

Method

  1. Melt the butter in a medium pan.
  2. Add the onion and sauté until translucent.
  3. Add the garlic and potatoes and sauté for two minutes.
  4. Pour in the stock, bring the soup to the boil, then simmer for 8-10 minutes.
  5. Transfer soup to a food processor and blend to pureé.
  6. Return soup to pan and add the cream.
  7. Simmer soup for further three minutes.
  8. Remove soup from hob and ladle into bowls.
  9. Garnish with chives and serve.
